'Cave Dew' is young Santa Cruz winemaker James Jelks' homage to the early years of his wine education, in the early 2000's, when Burgundy had become dominant in the global wine education, and therefore Pinot Noir was the variety that he spent a lot of time thinking about. This is Florèz's more affordable or accessible bottling of Pinot, drawn from two mountaintop vineyard sites in the Santa Cruz mountains: Hunter Hill, a coastal site on weathered sandstone tucked into the redwoods, and Kadlecek Vineyard, just minutes away from the Florèz winery on a steep southern exposure. 50% whole-cluster, 50% destemmed, rested in neutral French barrels for about ten months on lees.
