*Winemaking* The harvested grapes were put into stainless steel tanks with the whole clusters and maceration carbonic was carried out for one to two months. Then 50% of the grapes were destemmed, and the remaining 50% were pressed to make wine. The pressed wine was then put into a tank with the grapes and they were macerated for 3 weeks with punching down twice a day. The wine was pressed again and bottled at the end of fermentation to produce a slightly effervescent type of wine. Just before bottling, 15ppm of sulfites was added.
*Tasting* Orange-hued, cloudy rosé color. The aroma is reminiscent of acerola, lychee, and minty herbs, with aromas of sweet tropical fruits characteristic of Aki Queen. It is characterized by a slight residual sweetness, gentle acidity, and tannins extracted from the skins. The delicate, ultra-fine bubbles spread over the mouth, with ripe fruit and tannins lingering slowly on the finish. Shaking the bottle to let the lees dance in the wine mellows the tannins and makes the wine smooth to drink.
*Winemaker comment* The fresh table grape Aki Queen is characterized by its lovely rosé color and tropical, rich aroma. This wine is a sister wine to Perlant Rosé, which we started making in 2019 VT. The lees are left in the wine as we want to make the most of them. You will enjoy the changes in tannins caused by the lees.
