A majority of old Cinsault (65%) combined with 30% Syrah in carbonic maceration and 5% old Carignan. The harvest is carried out in a box and the vinification focuses on punching down at low temperature for gentle extraction. The result is a fruit bomb with all the same good structure and a nice sweetness.
The CIRY CATTANEO estate is an estate created in 2015 by David Ciry, oenologist and Marion Cattaneo, chocolate maker. This small estate, certified Organic Agriculture, of 6.5 ha is based in Laure Minervois, between Carcassonne and Narbonne. Vinification and aging are carried out at the estate. The vines are located on two very distinct terroirs: clay-limestone valleys at altitude in the villages of Siran and La Livinière and sandstone terroirs in the village of Laure Minervois. Gargantua is a cuvée bringing together 3 grape varieties, harvested in boxes and vinified at low temperature to promote gentle extraction in order to preserve all the fruitiness of the bunches.
