Eva De Los Santos Blanco is an uncommonly cultivated native white grape of southern Spain, here given a rare monovarietal bottling by the organic Cerro La Barca winery.
It is made from 100% Eva de los Santos. From this, we get a wine that is reminiscent of some Rias Biaxas wines with many of the same stone fruit characteristics. Grown in the southwest region of Extremadura on the Portuguese border near Juan Sojo and Ångel Luis Gonzalez, the winery takes pride in being the only organic winery in the region. The grapes are harvested manually at night to preserve quality and freshness. It is fermented with wild yeast in stainless steel then bottled unfiltered and unfined.
