50% Sauvignon Blanc, 50% Loin de L’Oeil
Grapes are hand harvested and destemmed. The grapes are pressed and the juice ferments spontaneously in stainless steel tanks in contact with the skins for about 5 days, to produce a slightly orange wine. The wine is racked once after alcoholic and malolactic fermentation complete, and goes back into tank for 6-8 months of elevage. The wine is bottled unfined and unfiltered with a small addition of sulfur at bottling. Soft, fruity and aromatic nose with a rich and smoky finish.
