South Enea, Umbria. 100% Grechetto from 20 to 45 year-old vines grown on in marl, limestone, and clay soil. After hand-harvesting the grapes, the fruit is destemmed with one night of skin contact and no temperature control. Fermented in stainless steel and fiberglass with wild yeasts. 20% aged in neutral oak, 80% in stainless steel.
Unfined, unfiltered, no SO2.
