Carica l’Asino or 'load the donkey' is a rare local varietal that derives its origins from the fact that the region's hills were so steep that the grape could only be harvested by donkey. While small splashes of Favorita, Cortese and Sauvignon provide the bones, the flesh of this Carica is all waxy and textural; she's a glass full of yellow stonefruit, honeycomb and fennel pollen/flower. It's rare to encounter such an obscure varietal with so much magnetism.
