One-woman show Laura Brennan Bissel aims for old-world elegance and balance when crafting her wines and it shows! Her wines drink on the classic end of the spectrum, proving that natural wine doesn’t have to be edgy or experimental-tasting like this old-school Cab, from 80 + year old vines (possibly the oldest planting in Napa and Sonoma). This red is lean, and built to age, but with some time and air to open up, it expresses brambly and dusty red fruit with intense forest floor undertones. This is an elegant and classic example of Cab, showing all of the varietal qualities people hunt for, but in a much more delicate and subtle expression.
