Notes
Though your mind may immediately wander towards the cheese of the same name, Pecorino is a rarely seen white grape from Italy’s Adriatic coast.
Luca treats it lightly, with a short fermentation in fibreglass tanks preserving both flavour and freshness.
With no fining, filtration or added sulphur, this minerally white is bright, lively and lemony.
